This salmon dish is light and sophisticated, and if prepared according to the recipe below will be an absolutely mouth-watering meal.

  1. Ginger, Chili, and Lemon Salmon

Serves 4 (halve ingredients for 2 people or keep it the same if you are a big eater) Ingredients ·       750g salmon fillets ·       Juice of 2 lemons ·       1 piece ginger, peeled and grated ·       2 to 3 chili peppers, seeded and chopped ·       4 cloves garlic, minced ·       3 tablespoons olive oil ·       1 teaspoon sea salt Directions Marinade - In a bowl, mix olive oil, lemon juice, ginger, chili peppers, garlic, and salt. Salmon - Place salmon fillets (skin side up) in a shallow dish and pour marinade over it. Cover and marinade for at least 30 minutes. Preheat oven to 180 degrees Celsius. Line a baking sheet with aluminum foil and lightly grease it with olive oil. Place salmon fillets onto the prepared baking sheet, skin side down, and drizzle some of the marinade over them. Cover with aluminum foil and bake for 15 minutes. Grill for a further 3 minutes or until the top is golden-brown. Transfer to a serving platter and serve with steamed veg or a fresh salad. Source
